Ravine Vineyard Restaurant is taking a Young approach

Note: Ravine Vineyard has just announced a new chef who will join Paul Harber in the kitchen. Here’s the news release issued today:

NIAGARA-ON-THE-LAKE, ON — Ravine Vineyard’s Chef Proprietor Paul Harber is excited to announce that Nathan Young will be joining him in the kitchen beginning Tuesday, May 1, 2012. With the addition of Chef Young, Ravine looks to
elevate an already celebrated food program that was ranked by Wine Access Magazine as one of the, “World’s 20 Best Winery Restaurants,” in 2011.

“There are many organic synergies in our food philosophies. Nathan’s enthusiasm towards food is inspiring. I feel the addition of Chef Young in the kitchen at Ravine our culinary program and vision just became stronger,” remarked, Paul Harber, Brand Manager and Chef Proprietor of Ravine Vineyard.

Chef Young leaves his post as Sous Chef at Hillebrand Winery Restaurant. For over five years he has worked closely with Chef Frank Dodd, a leader in the Niagara local-food movement.

Chef Young’s interest in food began at a young age when he used to watch his mother and grandmothers cook. Before settling in Niagara-on-the-Lake, Chef Young’s career began at Walper Terrace Hotel in Kitchener, ON. He also received detail-oriented culinary instruction from European Chefs at Langdon Hall in Cambridge, ON, considered by many to be Canada’s premier Relais Chateaux property.

Drawn to the discipline, Chef Young went to Europe working with Chef Michael Caines, a two star Michelin Chef at Gidleigh Park Hotel in Devon, England. Chef Young returned to Toronto’s Canoe Restaurant under the leadership of Chef Anthony Walsh before setting up roots in Niagara-on-the-Lake, ON.

“Cooking is an art. The lessons taught to me over the years, and my own passion will be reflected onto the canvas that is Ravine,” said Young.

Ravine Vineyard is a family owned organic winery located in Niagara’s renowned St. David’s viticultural area near Niagara-on-the-lake that is steeped in history. Not only are the owners 5th generation farmers and descendants of loyalists that founded the area, but they are an embedded symbol of entrepreneurialism in the region. Their family has milled, farmed, canned fruit, mined gravel, made boats and industrial equipment.
